A fiery and flavorful Rajasthani dish, Laal Maas’ distinctive red color comes from the Mathania red chilies used in the preparation. Legend has it that this dish was invented by dessert warriors who had minimal spices to cook with! I use both whole spices and ground spices in this dish for an amazing concentration of flavors & aromas in every bite.
